FLYING SAUCERS

This is what my mom use to call this when we were little, Flying Saucers. The name has stuck with us and it’s what my family calls vetkoek with mince.

I love making this with my mom for our kids, we make a perfect size for kids.

I am so happy to share with you my recipe.

VETKOEK

Ingredients

1kg Cake Flour

10ml salt

30ml sugar

10ml instant dry yeast

30ml cooking oil

750ml lukewarm water

Method

Sift flour and salt together. Add sugar and yeast.

Add oil and enough lukewarm water, cut in with a knife and mix to a soft, sticky dough. Add more water, if necessary.

Turn out dough onto a lightly floured surface and knead for 5-10 mins, or until dough is smooth and elastic. Place dough in a large, lightly oiled bowl, cover and leave to rise in a warm place for about 30 mins, or until doubled in size.

Knock down dough on a lightly floured surface and knead until smooth. Divide into 30 pieces and roll into small smooth balls.

Place onto greased baking trays. Cover and leave to rise in a warm place for about 15 mins or until balls of dough are well risen.

Heat oil in a medium, heavy-based saucepan. Gently drop dough balls, in batches, into hot oil. Turn constantly and deep fry until done and golden brown. Remove from oil and drain on paper towel.

MINCE CURRY

Ingredients

1 kg of steak mince

1 onions, peeled and finely chopped

2 cardamom pods

3 cinnamon sticks

3 curry leaves

2 tbsp of fresh garlic & ginger finely grated

1 tsp turmeric

3 tbsp of roasted masala

1 tsp of chili powder

Salt to taste

5 potatoes, peeled and cut into cubes

1 cup of peas

fresh coriander roughly chopped

3 tbsp of olive oil

Method

Heat your oil in a large pot on medium to high heat and add the onions, cardamom pods, cinnamon sticks and curry leaves and fry until golden. Add the minced meat and garlic & ginger and braise for 5 minutes, stirring occasionally.

Add a cup of warm water to the minced meat and cook on medium heat for about 30 minutes. Add the spices and salt and cook and stir for 10 minutes, add a little water at a time to prevent the spices from burning. Add the potato cubes with 2 cups of warm water and cook until almost tender, add the peas and simmer for 8-10 minutes.

Cut open the vetkoek, fill with mince and top with fresh coriander.
